This year has been, so far, full of gluttony. I haven’t been that much cautious with what I eat and I’ve found difficult to reduce the sugar in my daily basis. These are still effects from Christmas and New Year excesses.

But I realized I could still eat and do what I love – to bake; I just have to adapt everything to my needs for this moment in particular… And eventually, everything will return to normal.

This is a “critical” time for me – I’m preparing myself for my first half-marathon at the moment. Yes, it’s true, I’m a runner, and yes, it’s possible to balance cakes and candies with running or any other regular physical activity! Both my mind and body have to grow stronger, so I have to be very careful with what I eat – meaning, no fat nor sugar! Of course, I’m allowed to “slip” once in a while – I’m not looking to be a top athlete!

Happy holidays everybody! I bring you one last sweet bite before Christmas day – chocolate and caramel shortbread. Perfect for small bites and even to give as a present, if you’re the kind of person that loves offer homemade gifts. They just look beautiful inside a jar and believe me, young or older, people will love these!

After all, who doesn’t love the combo chocolate and caramel? Ok, probably the allergic ones, but seriously… It’s irresistible!

Double Chocolate Chip Muffins / Queques de Chocolate Duplo

So, yeah, it seems Christmas is here. One more week down and let the fun begin -although I’m already having fun! 🙂 Baking and cooking never felt so good!

I love waking up and do some Christmas-y baking by the early morning. It’s definitely the best way to start a day. This week everything is going to be about chocolate of course, and I decided to start it with this double chocolate chip muffins.

Chocolate Bolo Rei

What is the best way to start December? I can give you the answer right away: it’s with some Chocolate Bolo Rei! You can read here the story behind the cake. It’s a Christmas cake and we Portuguese, as well as in my house, are used to have it during the Winter months.

As soon as you eat the first slice, you’ll crave for more and more. It’s so delicious and although very fulfilling, you just can’t have enough.

The funny thing is that I actually started to enjoy more Bolo Rei – I found a way to ignore the crystallized fruit, not big fan! -, so now I’m always looking forward to buy or do some at home, and eat as much as I can.
