Spring is coming with all its strength and power. Everything is blooming, colors everywhere and my kitchen is slowly surrendering to its enchantment.

I though it is time to bring some color to my house and why not start doing it with the food? Yellow is the perfect color and suits Spring perfectly, don’t you agree?

To start this season, I did some lemon cupcakes with the most delicious lemon curd and heavy cream. Let’s celebrate life and all the good things in it! 🙂

(Makes 6)
Ingredients:
45 g self-rising flour
45 g butter, soften + 60 g butter
45 g sugar + 100 g sugar
1 Egg, slightly beaten + 1 egg
6 Tablespoons heavy-cream, whisked
1 Lemon zest and juice + 2 lemons

Pre-heat the oven (180ºC). Whisk the 45 grams of soften butter with the 45 grams of sugar until you obtain a smooth and soft mixture. Add the beaten egg, without stop mixing. Add the flour, the zest and juice of 1 lemon; mix well.

Place the dough in cupcakes tins and let them bake for about 20 to 25 minutes.

Meanwhile, prepare the lemon curd. Place the 100 grams of sugar, the rest of butter and the zest and juice of the 2 lemons in a pan and heat everything until the sugar is dissolved. Take the pan out from the heat.

Beat the egg and add to the mixture; place the pan over the heat again until the mixture gets thick.

After the cupcakes are done and cold, take a spoon full of the cupcake centre and fill it with the lemon curd. At last, pour some whisked heavy-cream on top.

A Primavera está a chegar com toda a sua força e poder. As flores estão a florir, cores por todo o lado e a minha cozinha está, aos poucos, a deixar-se encantar.

Pensei que está na altura de trazer alguma cor cá para casa e porque não começar pela comida? Amarelo é a cor perfeita e combina perfeitamente com a Primavera, não concordam?

Para começar então esta nova temporada, fiz uns cupcakes de limão com o mais delicioso curd de limão e natas. Vamos celebrar a vida e todas as coisas boas dela! 🙂

(Faz 6)
Ingredientes:
45 g farinha autolevedante
45 g manteiga, amolecida + 60 g manteiga
45 g açúcar branco + 100 g açúcar
1 Ovo, ligeiramente batido + 1 ovo
6 Colheres de sopa de natas, batidas
Raspa e sumo de 1 limão + 2 limões

Pré-aqueça o forno a 180º C.

Bate-se os 45 gramas de manteiga amolecida com os 45 gramas de açúcar até obter uma mistura suave e esbranquiçada. Junta-se o ovo ligeiramente batido, sem parar de bater. Adiciona-se a farinha, a raspa e o sumo de 1 limão; mexe-se bem.

Deita-se em forminhas a massa e leva-se ao forno durante 20 a 25 minutos.

Prepara-se o curd de limão. Num tacho, levar ao lume os 100 gramas de açúcar com a restante manteiga e a raspa e sumo dos restantes limões. Dissolve-se e retira-se do lume. Entretanto, bate-se o ovo e adiciona-se ao preparado anterior. Leva-se novamente a mistura ao lume até engrossar.

Depois dos cupcakes estarem prontos e frios, com uma colher retirar o centro e adicionar uma boa quantidade de curd.  Por fim, espalhar as natas batidas por cima.
