The last post I write, I told you I would have to do something with all the egg whites I have in my freezer to use. Why’s that, you may ask?

Well, with my Backyard Tours – Finding Algarve job, I make a lot of homemade desserts, sometimes I use more egg yolks, others egg whites, because traditional Portuguese desserts requires a lot of eggs in general and so, I have to use all these egg’overs!

In early times, the nuns were the ones responsible to create new dessert recipes – for the kings, governors or landlords –and so, they came up with innumerous recipes where the main ingredients were too many egg yolks and a lot of sugar.

Of course, they used some egg whites for their experiences, but mainly they were used to iron their cassocks. Funny fact.

And that’s why I have so many egg whites left, just waiting for some use and to be the star of some new recipe of mine.

This chocolate cake is based in a chocolate mousse, where I just added some biscuits. The final result? Just delicious!

4 Egg whites | claras de ovo
50 g of dark chocolate
4 Tablespoons of brown sugar | colheres de sopa de açúcar amarelo
1 Tablespoon of butter | colher de sopa de manteiga
Biscuits or cookies | bolacha maria ou outro tipo de bolacha

Pre-heat the oven (160º C).
Pré-aqueça o forno (160º C).

Melt the chocolate and butter over a pan with simmering water. Add cracked biscuits or cookies.
Derreta o chocolate e manteiga numa panela sobre outra com água quente. Adicione a bolacha maria ou outro tipo de bolacha a gosto, em pedaços.

Whisk the egg whites until stiff. In alternated spoons and with care, add the chocolate mixture and sugar until everything is well blended.
Bata as claras em castelo. Em colheres alternadas e com cuidado, adicione o chocolate e açúcar com as claras até que obtenha uma massa homogénea.

Bake it for about 30 minutes or until you have a smooth and soft cake at touch.
Deixe cozer cerca de 30 minutos ou até que esteja leve e fofo ao toque.

You can decorate with confectioners’ sugar or cocoa powder.
Decore com açúcar em pó ou cacau.

Na última receita escrevi que teria que fazer algo com todas as claras de ovo que tinha no meu frigorifico. E porquê, perguntam vocês?

Bem, com o meu trabalho nos  Backyard Tours – Finding Algarve, faço imensas sobremesas tipicamente Portuguesas, para as quais, vocês sabem, são necessárias imensas gemas de ovo. E daí, sobrarem-me tantas e tantas claras…

Nos tempos antigos, as freiras eram as responsáveis por criar novas receitas para os reis, governadores ou senhorios e por isso, elas inventaram imensas receitas em que os ingredientes principais eram demasiadas gemas e quilos e quilos de açúcar.

Claro que também criaram receitas onde usavam claras de ovo, mas estas eram usadas principalmente para engomar as suas vestes. Facto interessante.

Esta receita é baseada numa mousse de chocolate, onde eu simplesmente adicionei algumas bolachas partidas. O resultado final? Simplesmente delicioso!

É impossível não comer este bolo de uma vez só!
