Morning Christmas Cupcakes | Queques para uma manhã de Natal

One thing about Christmas is the fact that you have too much food around the house. You see, sometimes you have such wide variety of goodies that you can actually lose your appetite. But it’s Christmas and you have to eat a bit of everything, even when you don’t feel hungry, and further, don’t forget the cakes and all the desserts after meal… Oh my, don’t really know where to begin.

At this point of the season, it’s easy to feel full everyday, every hour – and with some extra pounds! -, and even when you don’t have the need to eat, you simply grab something and give it a bite.

Well, I found my recipe a good one for people who are and have the problem I’ve described. These cupcakes suits perfectly in a Christmas morning – or any other morning! They’re soft and sweet; you can do them in a blink of an eye and the best is they’re so light, you won’t be feeling like a stuffed turkey.

You’ll need:
(Makes 8 – Faz 8)

100 g of all-purpose flour | farinha
3 Tablespoons of cocoa powder | colheres de sopa de cacau em pó
2 Tablespoons of white sugar | colheres de sopa de açúcar
2 Tablespoons of ground hazelnuts | colheres de sopa de avelãs trituradas
2 Tablespoons of grated coconut | colheres de sopa de cacau ralado
1 Teaspoon of baking powder | colher de sobremesa de fermento em pó
1 Tablespoon of butter at room temperature | colher de sopa de manteiga à temperatura ambiente
1 Cup of semi-skimmed milk | chávena de leite meio-gordo

Mix the first six ingredients. Add the milk and the butter at room temperature and blend everything, but not too much – as if you do, the cupcakes will turn stiff.
Misture os primeiros seis ingredientes. Adicione o leite e a manteiga e misture tudo – mas não demais, pois os queques ficam duros.

Bake them (200º C) for about 20 minutes. You can always do a buttercream or serve them with heavy cream, although I prefer them simple as they are, accompanied with a cup of hot cocoa – cocoa is never too much! 🙂
Levar ao forno (200º C) cerca de 20 minutos. Pode sempre servir os queques com uma cobertura de manteiga ou natas, embora eu prefira como eles são, acompanhados de uma chávena de cacau quente – cacau nunca é demais!

Uma das coisas que faz parte do Natal é a comida; existe sempre comida pela casa. E às vezes é tanta e de tanta variedade que uma pessoa até perder o apetite. Mas é Natal e por isso tem que se dar uma dentadinha aqui e ali, mesmo que não se sinta fome. E para não mencionar as sobremesas, bolos e afins depois das refeições… Meu Deus, nem sei por onde começar.

Por esta altura, uma pessoa já se sente cheia a toda a hora – e com uns quilos a mais! -, e o vicio de ter alguma coisa na mão e comer é grande. Por isso decidi criar uma receita para tentar resolver este problema. Estes queques são perfeitos para uma manhã de Natal – ou outra manhã qualquer! São fofos e doces; e o melhor são fáceis de comer pois são leves, o que não fazem sentir uma pessoa como um peru recheado.

Espero que estejam a divertir-se como eu, com as vossas experiencias gastronómicas natalícias. Com o Dia de Natal tão próximo – faltam 8 dias, 8 dias pessoal! -, há que aproveitar ao máximo o tempo com a família e amigos, e certamente, comer chocolate!

  1. WHOA those look really good. Nice photographs, too! The best thing about this “alternative” to heavy Christmas treats is that it doesn’t seem like an alternative at all—looks like something I’d eat anytime. Or maybe ALL the time!
