Carrot Cake | Bolo de Cenoura

Hello, remember me? I didn’t forget you, it has been just really difficult for me to save some time to bake and create something at the end of the day. And even when I do it, I keep delaying my posts.

Nevertheless, I’m thinking what I’m going to write and what I’m going to talk about all the time, and today it’s all about carrots!

I really like to see and read recipes with ingredients that supposedly are for “common cooking” and are used in pastry instead.

Everybody knows that carrots are healthy and therefore it has to be one of those vegetables we must eat every day, or at least should be present in our diet.

Carrots are rich in fiber, antioxidants, minerals and vitamins, especially Vitamin A. 100 grams of carrots per day are enough to replenish the levels of Vitamin A that the human body needs.

When I was a kid, like a lot of kids, I didn’t like them – or any other vegetable per say. My mother used to say that if I didn’t eat carrots, my eyes wouldn’t be pretty and that was the only way to make me eating carrots. Of course, today I know what she wanted to say back then; carrots are rich in beta-carotene, which is transformed in Vitamin A in the liver. That Vitamin A is transformed in a pigment in the retina, which helps fighting eye diseases.

Carrots are great to prevent lungs, breast and colon cancer; the antioxidants helps the anti-aging and protect the skin; a good diet in carrots lows the cholesterol levels; and can also be used as natural toothbrush. It cleans the teeth and takes care of the gums, since the minerals avoid tooth damages.

Not only because all of that, I’ve decided to bake something with carrots. And because it’s Summer and the ladies have to be careful with everything they eat, so they could go to the beach and be pretty and all, here is a cake that is possible to eat more than just a slice!

Remember that a cake, a cookie or what so ever doesn’t need to be bad for your health- it is always possible to transform recipes and create something delicious and healthy at the same time.

This cake in particular, is a non-fat cake. I only used sugar, flour, cinnamon, skimmed milk and carrots. Ok, and a little bit of chocolate, but that is optional as you will see:

180 g of sugar | açúcar
2 Tablespoons of flour | colheres de sopa de farinha
2 Teaspoon of baking powder | colheres de sobremesa de fermento em pó
1 Teaspoon of cinnamon | colher de sobremesa de canela
100 ml of skimmed milk | leite meio-gordo
2 Carrots | cenouras
1 Lemon zest | raspa de limão
Chocolate for topping | chocolate para decorar

Boil the carrots and then smash them. Mix the sugar with the smashed carrots.
Cozer as cenouras e depois esmagá-las. Adicionar o açúcar.

Without stopping mixing the ingredients, add the milk, the flour with the baking powder and cinnamon, and the zest.
Sem parar de mexer, adicionar o leite, a farinha com o fermento, a canela e a raspa.

Put the dough in a pan with greaseproof paper and take it to the oven (160º C) for about 40 minutes.
Colocar a massa numa forma e levar ao forno a 160º C durante 40 minutos.

Now, if you want just to make the cake prettier, you can melt chocolate and spread it all over the cake. In this case, I’ve only used 4 squares of dark chocolate. Don’t need more than that!
Derreter o chocolate em banho-maria e verter sobre o bolo.

My non-guilty pleasure. The cake was really soft and delicious. And I could eat more than I’m used too, because I know that the more I ate, the prettier my eyes would be!

Olá, lembram-se de mim? Eu não me esqueci de vocês, mas tem sido realmente difícil salvar algum tempo para fazer seja o que for. E mesmo que consiga, apenas adio os posts.

De qualquer forma, passo o meu tempo a pensar no que escrever e o que fazer, e hoje é tudo acerca cenouras! Gosto muito de ver receitas com ingredientes que normalmente são usados na “cozinha do dia-a-dia” na pastelaria.

Toda a gente sabe que as cenouras são saudáveis e por isso tem que ser daqueles vegetais que se deve comer todos os dias, ou pelo menos, estar presente na nossa dieta. As cenouras são ricas em fibra, antioxidantes, minerais e vitaminas, especialmente a vitamina A. 100 gramas de cenoura por dia é necessário para repor os níveis de vitamina A que o corpo humano necessita.

Quando eu era criança, e como muitas crianças, nunca gostava delas – ou outro vegetal. A minha mãe costumava dizer que se não comesse cenouras, não ficaria com os olhos bonitos, o que era a única coisa que me fazia comê-las. Hoje sei o que ela queria dizer com isso; as cenouras são ricas em beta-carotene, que é transformado em vitamina A no fígado. A vitamina A é transformada num pigmento na retina, o que ajuda a combater várias doenças nos olhos.

As cenouras também ajudam a prevenir o cancro dos pulmões, mamas e cólon; os antioxidantes ajudam no anti-envelhecimento e protegem a pele; uma boa dieta em cenouras baixa o colesterol e também pode ser usado como escova de dentes natural. Não só por causa disso, decidi fazer algo com cenouras. E porque é Verão e as senhoras têm que ter cuidado com o que comem para irem para a praia, aqui está um bolo que é possível comer mais que uma fatia!

Não se esqueçam que uma guloseima como um bolo, bolachas ou outra coisa qualquer precisa de ser mau para a saúde – é sempre possível transformar as receitas de modo a criar algo delicioso e saudável ao mesmo tempo. Este em particular é um bolo sem gordura. Tem um pouco de chocolate, mas é opcional também.
